Does the addition of the handle on the end of the saw alter anything when playing acoustic?

No. The sound he's playing is due to the S-shape bend you have to hold for a musical saw. You have to bend the saw downwards over your knee, while bending upwards on the very end of the saw with your hand. The flat part between those 2 bends is what resonates.

The handle is to help save your thumbs from getting really sore. :-)
