The tenor bridge has one button with a screw and it's at the very tip. The rest has a dowel glued through the ribs and into the bridge. Loading the board up with buttons would be excessive and unnecessary. The could actually cause problems (extra weight, mass and other problems I don't have space to go into in a comment). Of course in the end on this piano, the customer wants everything as original as possible so the real answer is: Because that's what Baldwin did originally.

Yes. In fact they are maple upright hammer shanks.
