After you attach the first piece of tape, before you fold the pieces into the "shipping" configuration, you should put the spare piece of siding in between them so you don't have to deal with the "bubble" and you can quickly tape over the other edge...
are all the roof hinges 240 degrees?

How well has the foil edging tape held up?

@jeepbear not a problem. The adhesive fibre tape is not so robust.
