My first time watching. I am great at Big Birds or Roast Beasts being youngest of 6 kids..So I need help cooking for just my partner and I. Although my left overs are quite popular with my neighbors.LOL
I really like the way you articulate the steps. I helps understand the technique like very easily, and I watch a lot of Food TV as I am disabled. It's always in the background.
OK So can we see you on the "NEXT FOOD NETWORK STAR?
I MADE THIS AND IT TURNED OUT AWESOME and the BEST!!!!! Turkey Breast I have ever made in my life!!!! Wonderful recipe, it is my favorite! THANK YOU for your video. Oh, I improvised the recipe a little bit by adding CHICKEN STOCK at the bottom of the pan to make it more moist. It was great.
[The only deal is the breast I got was bone-in. Mistake. Next time I will get it with bone-out, it will make a difference in cooking time.]
Aw thanks, withlove. Believe it or not, I've never went to culinary school. Completely self-taught with the exception of some good mentoring by a few chefs I've worked with.
Thanks - recipe was terrific. Especially the gravy. I had a 4.5 lb boneless breast, and other than longer cooking time, the process was flawless, and the results delicious.
Great video-usually I made a full turkey but this year I'm only cooking the breast-this video was very helpful & well done. Simple instruction & I really like that you used gloves & tongs to keep things clean. And thanks for the tip with the lemon juice-that will be helpful when preparing this for children to eat-wasn't sure if the wine would alcohol would cook out?
That's cool :) If my parents didn't make the same style turkey every year, I would try this! Once I'm 18, I'll be sure to try this once I remember to!
I would leave it out altogether and use just the stock. Right before you serve it, hit it with just a small squeeze of lemon. The acid in the lemon will brighten the flavors and in essence do the same thing that the wine would have done.

Is there anything to substitute for the wine if one doesn't use alcohol?
from3dn 2 years ago
Hey from3dn,
I would leave it out altogether and use just the stock. Right before you serve it, hit it with just a small squeeze of lemon. The acid in the lemon will brighten the flavors and in essence do the same thing that the wine would have done.
Hoe that helps,
Kirk

Cool, thanks for the reply! It's pretty simply and easy looking, and that was the only hurdle :)
