All this information is confusing and it seems every "expert" has their version of healthy eating. Bad carbohydrates versus good carbohydrates. I am borderline under weight (5'10", 140 lbs, small frame male) and I am one of the few in the US who want to maintain or gain weight. So how does one do this without spiking the index?

You most likely WILL feel irritable for a day or two if you stop eatng junk food....it's called "withdrawal"....you don't stop because you think your body is telling you it's not happy. The same thing happens on nicotine withdrawal...that doesn't mean cigarettes are therefore good for you because your shakes stop if you start smoking again.
@lilachick2k that's exactly what I do....but folks need to realize that if you're a carb junkie and you cut out carbs you shouldn't be surprised if you get irratable for a day or two....same thing happens to folks to get off sodas or coffee....it's not a sign that you're doing the wrong thing. The enemy is processed carbs...common knowledge.

I think low or no carb diets and very low fat diets are stupid. Just eat the right kind of fats and carbs in the right amount. I have eaten high carbs when I was a kid and I was never fat.
@MyJohnsonable No the opposite. Girls in Taiwan, Japan and in Canada and other places want me to go and visit them. I am not fat at all. I can eat a whole pizza and not get fat. My waist have gotten smaller. I really don't eat pizza often. Only like a couple of times a month but when I eat high carb I lose fat. :P

LOL I don't know how Taiwanese food is. maybe it's spicy. I try to eat mostly healthy carbs like whole wheat bread and some fruits and vegetables and oatmeal and whole wheat pasta but I don't get fat if I eat a big bag of potato chips or a pizza. hate me all you want but that is the truth and I have never lied on youtube.

Carbs are frequently associated with sweet food, but all carbs aren't sweet. Milk is full of lactose, yet it isn't sweet. Maybe you avoid eating quickly metabolized carbs contained in fast food, but you probably still eat good carbs in other!
There are practically no nutrients that we can use in vegetables or fruit. You ought to look into that, Sherry. Also, how do you explain that I am not depressed and have plenty of energy even though I eat no carbs whatsoever?
Carbohydrates are essential for optimal performance, both physically and mentally. You are obviously completely illiterate on the subject of human physiology.
