Cheap easy way to do this that I figured out when I was 10 y/o was with BOTTLE ROCKETS and PVC pipe. Good project but not for the faint of heart. If you just want a quick disposable way to do this try my idea? ;-)

Actually, like real rocket launchers; the rockets' fins are angled slightly so it spins during flight. The spinning would cause the spastic flight pattern you mentioned to stop. Also the spinning would also give the rocket more accuracy.

One thing you could do to save some money just take apart the launcher box from a model rocket launcher and attach that to a PVC pipe and wire LEDS and buzzer to it :D

This design wastes a lot of energy that could otherwise be used to propel the rocket. If you want to really get some umph out of a shoulder fired model rocket, look into piston launchers and rail guidance. Not much more difficult or expensive to build and will outperform most other launch systems. Not hating; this is a cool set-up. Just has room for improvement. :-)

Very clever way of preventing yaw in the barrel. I hadn't thought of that. One approach I've had success with is mocking the shape of a bazooka round, they are as wide at the nose as fins are on the rear with the cg being forward. You have to make sure you have enough drag on the rear to compensate (typically done with velocity). And enfantcool, this is nothing close to an AT-4. Military style rockets are more similar to recoiless launchers.
