@Alk6239 I'm pretty sure the goal is to remove the entire structure. If they were to blast it out, there would be some severe results from that much water at once. By going piece by piece and side to side, they can let more water out on an increasing basis. Just like in construction of a dam, you need to channel the water away from the immediate work area for a variety of reasons. Ecological, soil stability and worker safety are probably at the lead of that list.
I have to stop watching these videos it pisses me off.
