These strings aren't meant to be plucked or strummed, they're for the purpose of sympathetic vibration (they make the notes he play seem more "full" and "warm"). It's taken from concepts around the baroque period...look up the Viola d'amore (viola of love). There are 6 strings on top, and 6 underneath the fretboard.
