  • @PrincessDiana161 Diana I noticed that you don't use any onions in your Marinara sauce,? A lot of Italian recipes for basic sauce add in onions along with the garlic.? Do you find it better without the onions .? just curious about that.? I love all of your recipes.

  • Diana, I am glad that you enjoyed your peanut butter egg on easter! What other seasonings do you consider in flavoring pasta sauce? Oregano, Thyme,? I am planning a benefit spaghetti dinner for a family whose house burned down.

  • @padude64 you can add some oregano... not too much though, it's very strong herb :)

  • PrincessD, When I make my sauce it gets "chunky" after simmering. Is there anything I can do to stop this? The sauce taste great but it thickens too much. Is it maybe the temp I'm simmering at? I usually do a med. temp, and I do simmer for a couple hrs. Any help would be great! <3

  • Put it on low and cover it a bit... that might help it retain some water so it doesn't thicken too much :)

  • I have a question that maybe you know the answer to. My grandfather makes marinara sauce but with fresh tomatoes not canned. He is in the hhospital right now and he's deaf so I can't ask him but do you have an idea on how to make it with fresh tomatoes?

  • The garlic you put in - it looks pre-prepared. Do you just chop it and put it in oil in a container in the fridge?

    You added dried basel. Because it tastes stronger?

    I love to let my tomato sauce simmer for like 3 hours!

    Over on VH, I have a vid of my food suction thing. I make the bags and put the food in and save TONS of space in the freezer and have lots of stuff available for meals!

    Probably a lot healthier than jar-sauce as well!

  • Yeah I usually chop my garlic ahead of timr and store it in the fridge in olive oil. I use dried basil because I am too lazy to buy fresh LOL

    I have to food saver vacuum sealer too... love it!

  • Yes I do, I chop a few heads of garlic and store then in some OliveOil in a sealed container in the fridge :)

  • Sorry I'm so late in answering you...no I never add sugar but my mother in law does sometimes. Frankie doesn't like it too much so I tend to leave it out.

  • when you say yes do you mean with the garlic press or is there another tech.? So far so good my boys said it good but I just put it on. I may have put too much red pepper it has a bit of a kick lol

  • Loved the video. Would have loved to have seen the finished sauce at the end.

    I made fresh sauce once, using fresh tomatoes. Didn't taste right. Added a tiny bit of sugar, and then it was fine. Guess the sugar helped bring out the flavor in the tomatoes? Anyway, maybe it's different with canned whole tomatoes?

  • Chop up onions, fry them and then add them that will make the sauce sweet! A tiny bit of sugar is allright ..... thats to nrgins

  • Hope you didn't take offense. I really enjoy your cooking show. So I'm Italian (part Italian actually) and I collect a lot of genuine Italian recipes from different regions of the country, and almost all of them say the same thing: add the herbs right from the start so maybe you're suppose to do it that way.

    Anyway... If you want I can send you a recipe of a tomato sauce Tuscan style (Salsa di Pomodoro alla Toscana). It's got a mix of celery, carrot, and onion (what Italians call soffritto).

  • I got aroused! I could smell the tomatoes as I watched this. You forgot to add 1/2 tbsp of sugar to remove the acidity. Try it next time. You won't taste the sugar, but you'll be amazed what it does to the tomatoes!

  • Yes you can add the tomato paste to it. I find that it makes it a little too thick so I leave it out.

  • the only thing different i do is sautee onions and a bit of diced carrots (i know, but they slightly sweeten the tomatoes)and garlic, then the rest is the same (i like the crushed red pepper in mine too). if the tomatoes are too acidic, i'll add a pat or two of butter at the end to finish. the jarred sauces are too sweet for me (i think they add sugar) bleecchh! great vid!
