I would definitely use something besides spinach because cooked spinach leaches calcium from our bodies. So, maybe kale sauteed would work better. Also, morningstar farms is a no no as their products contain hexane. I have an alternate lasagna that is five layers and only has two layers of tofu so it costs less, has more veggies, and uses half the tofu. Still, great recipe. :)
The hexane is a new one to me! I don't normally use any Morningstar in this recipe. I also now just use two layers in a less-high pan, it's easy, not such a big project and comes out great. Thanks for the feedback. P.s. Leaching the bones makes one more flexible! Hahaha.. uh... hm...

I want to eat that! Definitely do it with those veggies! Now, you can also simplify and make a smaller order if you like (either with spinach or the other veggies, both ways). Just do less layers, can use a smaller aluminum or glass pan, etc. Don't forget the garlic and Italian seasonings! Let us know how yours comes out.
It's beyond delicious!!!! And it stands up tall, so yum! Def sauteed the spinach and onion, I actually did them separately cause there was so much. I found out though that 2 bags of spinach, 3 large onions and 4 extra firm tofus are enough. Needs plenty of garlic (powder is what I use) and a lot of Italian seasoning.
The marina should be medium bodied. Too wet and you have to baster out liquid, too thick and the noodles won't get done. But use plenty of sauce!
Love it! Thnx for sharing..I just do 3 layers with only firm tofu and tomato paste and tomato sauce from a jar(like Raos) awesome stuff..I never tried the tehini and spinach, but I make mine in a hurry for the 3 kids and they love it!

Yah, I make it these days with 3 lbs of tofu, just 2 layers. Fast easy, yummy! Have fun!

Downsize good. Veggie beef? Maybe the Morningstar Crumbles - Italian Sausage style.
Vegan Cheese? So sad. The tofu/tahini mix is prolly much better, tastes like ricotta. YUMMMM!!

I just made some yesterday, took me 30 or 40 minutes and then I threw it in the oven for an hour on 450 degrees. It rocks.
