Veal Tenderloin with Caramelized Shallots & Garlic

I think I'd roux up the sauce a bit just to thicken it a little. Probably have a handful of crimini's in the sauce also. A thicker sauce would beg for smashed red potatoes. A Malbec or Shiraz to wash it down with and you got yourself a meal!

Are shallots expensive? I bought a 3 pound bag that cost me $6 dollars. Is this too much? It really seems pricey...
