Fun facts about Mecha-Birdo:

If you beat any of its phases then restart before defeating it completely, it visually stays in the last phase it was in. Example: Defeating phase 1 makes its eyes turn permenantly red. Defeating phase 2 destroys its eyes completely. Unfortunately, this is PURELY COSMETIC. If it has no eyes, it will still fire lasers in phase 2.
