    The latex on her thumb is called a 'finger cot'. She probably had a cut, or something. Finger cots are used to prevent contamination of food and to protect open wounds.

  • @ThisIsCarsonian Here in Nashville, Tn. I have no trouble finding them in almost all of the local Asian markets. If you have a nearby Asian Market try there, or substitute anaheims or any other mild chili pepper.

  • @charliesommers494 I'm in Monteagle, TN and I can't find any asian markets. >.< At all, I've been looking all over..I mean off of the mountain and on.

  • @ThePuppetMuffin, It's not to far and there are several Asian Markets in Chattanooga. You could stock up on non perishables like mirin and soy sauce and be ready for some Japanese cooking.

  • @almazridzanie I always use sugar since I'm a minor, but there might be a better substitute somewhere.

  • @goirkens Mirin is sold in most Asian markets and there are no age restrictions on buying it as far as I know. At least not in Nashville, Tn. The alcohol content of things like vanilla extract are much higher. Vanilla extract usually has an alcohol content of 35%+ while mirin is only about 10%.

  • I've made this many times now, it's very delicious with both firm and extra firm tofu. The sauce is so good that I don't bother with the ginger or daikon anymore, but I will try growing shishito peppers to try with it (haven't seen shishito peppers in the store where I live, but I was able to order seeds).

  • @Freakykreea You can use dry sherry or white wine with sugar, one teaspoon of sugar for each tablespoon of alcohol. If you have sake, you can use two parts of it to every one part of sugar. Mirin isn't that rare, though. You should be able to find it in the international aisle of a supermarket.

  • I had this dish at my favorite sushi place once, and it changed my life. It was served just as suggested - piping hot. I burned he roof of my mouth trying to stuff it all down because it was just that good. The sauce completes the umami affect desired from the fried tofu. I love it!

  • @chilliconcarnie1 It doesn't actually dissolve much flavor. It tastes like soy beans if you've ever had them, which is like a cross between milk and peanuts, but VERY faintly. Feels like a firm custard in your mouth.

  • My gawd...this is my favorite way to prepare tofu. Tofu itself has a nice texture, but when it's fried the contrast between crispy and creamy is divine.

  • @hitmankiddo Dashi is Japanese cooking stock included Kombu dashi (from kelp), Niboshi dashi (from small sardine), and Shiitake dashi (from shiitake mushroom) and Katsuobushi dashi (from dried tuna).

  • @akforever112210 if you cut yourself while cooking, it's easier to wear a glove or finger condom than a band-aid.

  • @akforever112210 my friend's mom does this too, but I dunno if it's for the same reason as the chef wears hers. It's actually just a cut out latex glove finger rolled over your finger so that if you have a cut or an open wound, you don't contaminate the food and injure yourself more (just imagine getting hot pepper juices in a cut!)
