This guy calls himself The Minimalist! He made a mess adding so many ingredients to his "arepas". It's ok if you want to cook something different but this is an insult. At least be decent enough to say it's your own approach to a very old and simple, minimalistic recipe.
There is nothing more Venezuelan than Arepas and this is truly an insult. I know Arepas slightly varies in different states, but I've never seen or heard anything like this, and this is not an Arepa, nor from Colombia or Venezuela. Perhaps, Mr Bittman you made something you thought resembles an Arepa but it is nothing close to it or even related. I can teach you how to make them.
What is that? Mr Bittman, I'm Venezuelan and that is not an Arepa, go to any international market or Walmart and buy Harina Pan (Venezuelan flour for Arepas), all you need is a bowl with water and a bit of salt to the taste and add the flour until you get a soft manageable dough, then you make the arepas patties from it, grease the pan so the arepas wont stick and that is a Venezuelan Arepa, I've never seen what you made here and I ate Arepas everyday all my life.

This is not a arepa. not even in ingredients or shape.
Arepas are made just out of corn flour, water and salt. And even some of us don't add salt to the mix. Of course there are variations like "arepitas dulces" (sweet arepas) or even wich "chicharron" or "cheese", in my house we also add carrots and cheese to the mixture, you can even make them fried. But what you did it's not even close to what a arepa is. Although adding fresh corn to it, it's nice omnomnomnom corn♥. I laughed at "Arrrrepas"

Hello Mr. Bittman, I think you got the wrong recipe, this will never be a venezuelan arepa, the real original arepa is just made from white corn flour, water and salt, vegetable oil is optional. You just have to put them over a flat oiled pan and later you bake them... nothing else...

I agree with most of the posts here - while it looks flavorful, its not what I remember as an arepa (why did he roll th e 'r'?!). The stuff he added to the corn meal... ummm... no. Stuff (yes, like the black bean) goes on the inside! Despite not being 'authentic' I like the recipe and will try it!

There is nothing more Venezuelan than Arepas and this is truly an insult. I know Arepas slightly varies in different states, but I've never seen or heard anything like this, and this is not an Arepa, nor from Colombia or Venezuela. Perhaps, Mr Bittman you made something you thought resembles an Arepa but it is nothing close to it or even related. I can teach you how to make them.

What is that? Mr Bittman, I'm Venezuelan and that is not an Arepa, go to any international market or Walmart and buy Harina Pan (Venezuelan flour for Arepas), all you need is a bowl with water and a bit of salt to the taste and add the flour until you get a soft manageable dough, then you make the arepas patties from it, grease the pan so the arepas wont stick and that is a Venezuelan Arepa, I've never seen what you made here and I ate Arepas everyday all my life.

This is not a arepa. not even in ingredients or shape.
Arepas are made just out of corn flour, water and salt. And even some of us don't add salt to the mix. Of course there are variations like "arepitas dulces" (sweet arepas) or even wich "chicharron" or "cheese", in my house we also add carrots and cheese to the mixture, you can even make them fried. But what you did it's not even close to what a arepa is. Although adding fresh corn to it, it's nice omnomnomnom corn♥. I laughed at "Arrrrepas"

Hello Mr. Bittman, I think you got the wrong recipe, this will never be a venezuelan arepa, the real original arepa is just made from white corn flour, water and salt, vegetable oil is optional. You just have to put them over a flat oiled pan and later you bake them... nothing else...

ARE YOU CRAZY???? What kind of "arepa" is that???? That is so disgusting!!!! ASCO!! Our arepas are made with water, corn meal and salt, there are a few places in our country where they add some oil or butter.... WHAT KIND OF PROFESSIONAL ARE YOU MAN??? realmnt q importa discutr q lleva la arepa, tnmos un pais cn una cantidad d dinero inorganico en la klle, pobrza a mil, un aparato ecnmico improdctivo, cifras de prodccion muy irreals y dsconocidas, un pais dividido, una libertad de expresin kda vz menor, para dar idea mas o mens el sueldo minimo solo alcanza para comprar el 54% d ls products de la csta basica, la cual no toma n qenta crvicio y bienes como luz, agua, ropa etc. eso ntre otrs cosas y nos preocupamos por cmo se hac la arepa x favor

si, claro hermano un pais empenado gracias a un gobierno neglignte, las tradiciones y culturas estan perdidas y mientras no salgas de los problemas economico politicos que tienes no vas a poder recuperar tradiciones, veo que entindes espanol habla en este idioma, es parte de nuestra cultura, la politica y la economia es lo que principalmente mueve el nacionalismo y la cultura de un pais, la modifican de forma radical, es situacion de subsistncia hermano, por eso hay que ocuparse de ello.

I haven't been to Venezuela nor have I ever eaten a "real" arepa. But here in Atlanta GA we are having this version for dinner tonight with a big bowl of black beans because it looks delicious.

Disculpe, pero así no son las arepas, ni venezolanas ni colombianas ni nada que se les parezca. No llevan maiz en grano, ni cilantro, ni nada que se le parezca. Debió decir que es una versión muy personal de las arepas, pero vamos escribiendo en The New York Times es como absurdo no informarse antes de escribir o por lo menos aclarar que estas no son arepas, ni las de Chavez ni las de nadie, sino las suyas.

Well, maybe this is a Minimalist version of Arepas, but no even close to the recipe of the Venezuelan Arepas. I hope Hugo Chavez didn't give you the recipe.
Maybe they are Mexican Arepas, because the jalapeño ingredient.
Even when you fill the Arepa, you use sour cream, what that's means, insted you can use black beans with white hard cheese (Domino)

if you guys read the video description, you'd see that Mark Bittman is making a "version of arepas" it's his own interpretation... he doesn't claim that these are the same arepas you will find in Venezuela

I agree with most of the posts here - while it looks flavorful, its not what I remember as an arepa (why did he roll th e 'r'?!). The stuff he added to the corn meal... ummm... no. Stuff (yes, like the black bean) goes on the inside! Despite not being 'authentic' I like the recipe and will try it!

Well.. Now that's a really weird Arepa! I'm Venezuelan (Wich is something I'm not very proud of but whatever, not the point) and those are not the Venezuelans Arepas we (Not me, I don't like 'em!) all eat here!
We just kinda make a simple Corn Meal and put stuff inside! Not all that stuff! Like what's with the Cilantro? Lol!
However, that kind of Arepa looks yummy! :D I might try it!

the whol point is that.. cause we VENEZUELANS call the arepa... a (venezuelan bread) because is made with that purpose.. all the flavor comes in the "Stuffing" you put in your arepa (like a sandwitch). You can use.
