1. Nitrogen is not toxic. If it was, we'd be dead, for the atmosphere is 78% nitrogen.
2. Any nitrogen left over would evaporate into the atmosphere.
3. Salmonella bacteria would die after being exposed to subzero temperatures.

Well, hate to disappoint Spin, but it's safe. We all ate some, and I'd do it again anytime to prove it.
The reason it's safe is that the liquid N2 boils off very quickly and turns into harmless gas.
And even if it stayed trapped in the ice cream as a gas, nitrogen is over 70% of our atmosphere; it's not poisonous to us.
