  • Alternatively, you can pour LN2 into the bowl, allow it to settle and stop boiling vigorously, and add the ice cream (liquid) drop by drop, giving you dippin' dots.

  • And btw, that's too much protection for LN2. It's actually not that dangerous (assuming you don't put your hands in it). Working in a chemistry lab, I pour more liquid nitrogen daily than most people do water, and the trick is just to not wear anything that soaks. So jeans and those gloves are indeed a bad idea. If gloves are needed, there are cryogenic gloves that resist LN2 soaking.

  • Don't add eggs unless you plan on making a custard...with means you need to heat the eggs in the cream...both making the ice cream thicker and killing the Salmonella.

  • Airgas will rent you a dewar. You need to put down a deposit, and you have to cart it away in a truck. But you can rent a truck, too. That's how I did it.

  • mehh i used it to make icecream in chem todayyy very funnnnn. but we were'nt required to wear goggles...hmmmm....i dont think anyone got hurt. but we had so much fun pouring the stuff on the lab tables. lol. it would turn to gas form sooo quicklyy. but the icecream was amazing! soo creammy sooo cold....yummmy

  • If you don't remember liquid nitrogen evaporates very fast. One drop wouldn't hurt you a bit you can, try pouring nitrogen over your hand, it won't do anything. For more drops you must be really clumsy to do that.

  • Here's the problem with your thinking on this. Liquid nitrogen boils. When it boils, it moves, you've probably seen that. As long as it doesn't stay in one place and freeze the same tissue, you won't get hurt. It's called the Ledenfrost effect.

    But your eye sits in a socket. That socket is ringed by muscle tissue that makes it a tight fit. If an LN drop gets in the socket, it may stay there, because it has nowhere else to go. Then it freezes the same spot.

    That spot is your eyeball.

  • It's -297.4 degrees. Liquid Nitrogen is colder than that: -320 degrees. The metal bowl the LN goes into is conductive, so it's definitely possible that the bowl (or at least the air right next to the LN) will chill down to -297.4 degrees, condensing liquid oxygen right from the outside air and onto the bowl.

  • 1. Nitrogen is not toxic. If it was, we'd be dead, for the atmosphere is 78% nitrogen.

    2. Any nitrogen left over would evaporate into the atmosphere.

    3. Salmonella bacteria would die after being exposed to subzero temperatures.

  • Liquid helium will cost you about 12x the cost of liquid nitrogen - depending on your location, maybe $600 or so for 5 liters. For those prices, you better get it on film :)

  • OK, for starters, it,s ok to eat the icecream because most of the liquid nirogen evaporated when he stirred it. And the reason why it is flamable is that liquid oxygen forms on the outside of the bowl. LIQUID OXYGEN IS HIGHLY FLAMMABLE DUE TO THE FACT THAT FLAMES NEED OXYGEN TO BURN, AND WHEN IT'S LIQUID FORM, IT TENDS TO BURN FASTER! (this is why they use it for rocket fuel)

  • Well, hate to disappoint Spin, but it's safe. We all ate some, and I'd do it again anytime to prove it.

    The reason it's safe is that the liquid N2 boils off very quickly and turns into harmless gas.

    And even if it stayed trapped in the ice cream as a gas, nitrogen is over 70% of our atmosphere; it's not poisonous to us.
