  • Made it again tonight. My family loves it. Tonight I used brown rice, as it is what I had on hand.I vary the types of vegetables, as to what I have. Tonight carrots, broccoli, green beans, celery and bell pepper. I used an extra cup of veggies to make it a one dish meal. Thank you for showing us how to do this properly!

  • Tried it last week and it turned out great. I am making it this week for a party. Did not use black soy as I didn't have it, so not sure about what kind of taste it would create but I did use regular soy

  • Black soya sauce isn't used because the flavour doesn't suit Chinese fried rice & it makes the appearance unappealing. Hence, you normally would have to add sugar & even dried or fresh chillies to counter-balance the slightly bitter and caramelized taste of the black sauce. It is fine to add in whatever you want to your fried rice but it would be nice to get one's fact right when presenting a dish from a particular country. I like to use Thai fish sauce which is found in most Thai dishes.

  • Kai, it is kind of you to share your recipes with others. However, I would appreciate if you could change the title of this video to "Kai's fried chicken rice".

    I am a Chinese and unfortunately, this is not the way we cook the fried rice. We cook better fried rice than that. We do not add in garlic powder, sugar and black soya sauce. And yes, while anyone of us can add in chicken meat, I have never come across such dish during my stay of 6 years in several cities in China.

  • nice. when adding the rice in just add and stir in a bit at a time, its much easier to mix everything that way rather than adding all rice at once.

  • @Starwingchild The Japanese & Chinese use their own rice which is starchier than Thai fragrant rice. All works well. Japanese fried rice have lesser ingredients but are as good. In S'pore, M'sia & even Indonesia, you may find a fusion of fried rice but I'm fine as long as they taste good. One of the worst that I had & annoyed me was a misrepresentation of a noodle dish fm my country that was served while I stayed in China & Australia. They add curry powder which makes the dish tastes awful.

  • The only thing I can add is that I prefer to add the soy sauce to the pre boiled rice before frying I find it coats the rice a lot more evenly and avoids concentrated deposits of soy in the dish. Other than that nice tutorial :)

  • @TheDramafreak98 Fried rice can be made with or without the vegetables. It is a matter of preference. Fried rice originated during a dire time of poverty in China when leftovers where not to be thrown out but to be turned into another dish. They would save old rice and other things left over from the previous meal and separately fry them to bring out the individual flavors adding the rice at the end to fry in the flavored oil so what you put it in it is your choice, no right or wrong.

  • @FattyArbuckle1981 there is not a single east asian dish that should contain butter or margarine as butter was never used in the orient (most chinese, japanese, koreans etc are lactose intolerant) and margarine is a relatively modern invention made from mixing animal or vegetable fats with skim milk and various other chemicals. typical oils and fats used in the orient are peanut oil, coconut oil and sesame oil. i think you might be confusing chinese with french cuisine

  • @jsenni Butter-making never has a history in China, Japan and Korea. Besides, early Chinese cooking with the ordinary folks lies in the fresh ingredients and oil available. Ask the French to use sesame oil and they will faint.

  • @iXenomorph This person is right. You do have to use overnight rice. Marinating the chicken is option. The Northern Chinese don't use eggs that much(because they eat bread and noodles more) but Southern Chinese do. Lastly, peas and carrots are definitely Westernized. Peas and carrots messes up the chewing feel of the rice. If you guys don't know Chinese food, I suggest you to thumb up iXenomorph's comment instead.

One Indian cook used bean sprouts which are not found in Chinese fried rice because their bean sprouts are bigger & hv hard 'heads, taste awful in the rice & will make the rice soggy. You can fry chopped garlic & add some bean sprouts with fried salted fish or even fried anchovies. You may add in sliced prawns, sliced red chillies & spring onions to counter-balance the saltiness, so, go easy on the salted fish.

    Ajinamoto is bad for health & not used by the Chinese.

  • @diotriton2 It's the turmeric in the curry powder that gives the yellow color. The curry powder found in most spice sections is pretty much the same as "chinese curry powder" though.

  • Hi. How do you make your rice so loose? Whenever I use the rice cooker, the jasmine rice kinda sticks to each other.

  • @zajyuam - the secret is to allow the rice to cool. When it's completely cool it goes hard - its then better for making fry rice. I usually use left over rice from the day before. To separate or break down the hard rice grains, use a fork or a potato masher.

    There are different kinds of rice that are a lot more "loose" and not sticky. Just go to your local Asian supermarket and you should be able to find it.

  • @aguirreruru Black Soy Sauce (Siew Dam) is dark almost black syrupy sauce. The sweet sauce is a Thai ingredient used in stews or to flavor vegetables, beef or chicken. You can make it at home with 1 part soy sauce to 2 parts palm sugar boiled until syrupy, then cooled. Hope that clears up the confusion.

    The only thing i do differently is that i boil the chicken in chicken stock, then i "shred the boiled chicken" with 2 forks before adding it into the wok.
