  • Why is this guy using a saw instead of popping the joints? The students are missing a lot of knowledge with the teacher not showing them how to properly butcher. All in all, he leaving bone chips on the meat. Popping the joints would not contaminate the meat with bone chips. Other than that, this is a good video.

  • Worst. butcher. ever. I was a fish butcher for a while, and was always amazed at how bad chefs are with processing. They need raw protien to do their fussy magic, really. It's just another form of knife skills, but they have enought to learn already I guess.

  • You should never saw threw the meat, when you have just got past the bone you should slice threw the meat with a knife. You need to practice on your skills before teaching....
