  • I really enjoy Justin Wilson and I love cajun cookin. Tex-Mex is my favorite style of food, but cajun cuisine is a very close second. I guess that's the Houston in me. Anyway, I always enjoyed watching Justin Wilson's show, he reminds me of my Grandpa.

  • Oh I miss watching this guy. I started watching him when I was 4. He used to cook on an outdoor set then go inside to eat. It was a treat to watch him on PBS on Saturdays. Such a shame that no dvd's have been made of his show.

  • @quyenthenghiem it depends on how you make it. cajun/creole gumbo takes anywhere from 1 hr 45 min to 3 hours. some can do it in about 1 hour but there is not enough time to marry all of the flavors properly. justin also omits bell pepper, and celery. he keeps it simple. but it lacks much of the flavor. i do not know anyone that uses wine...ever. just stock

  • I live in Philly, and the food here has NOTHING on New Orleans. I am from Birmingham and worked for a while in a Cajun restaurant, married a Cajun (mistake) and feel pretty confident in my assessment. However, the beer selection in this town is the best in North America.
