@quyenthenghiem it depends on how you make it. cajun/creole gumbo takes anywhere from 1 hr 45 min to 3 hours. some can do it in about 1 hour but there is not enough time to marry all of the flavors properly. justin also omits bell pepper, and celery. he keeps it simple. but it lacks much of the flavor. i do not know anyone that uses wine...ever. just stock

I live in Philly, and the food here has NOTHING on New Orleans. I am from Birmingham and worked for a while in a Cajun restaurant, married a Cajun (mistake) and feel pretty confident in my assessment. However, the beer selection in this town is the best in North America.
