My partner and I made your recipe out of the pepperoncinis I grew from seed here in Georgia. Wow, what a good flavor, and our friends have been asking for more. The recipe went way beyond my expectations!
As a side note, I didn't realize that if you grow different types of peppers right next to each other, that they will cross pollinate(?) and some will become a mixed pepper. We found out the hard way by biting into a very smooth looking pepperoncini, and it was HOT HOT.
Pepperoncinis are often quite hot. Cross pollinated peppers won't affect this year's fruit. That's determined by the seed that generated the plant. The seeds from a crossed pepper will not come true to type next season. Lots of things affect how hot a pepper is, but pollination is not one of them.
Great job! I make my own hot sauce and always wear disposable gloves; I have touched the corner of my eye - the capsicum lasts on my fingers for quite a while....
I do not touch my eye while wearing the gloves....
We had a bumper crop of peppers so I checked youtube for ideas. I followed the receipt and it worked out great. After a month in the fridge we gave it a try. We loved them. My husband asked really nice for me to make more. Thanks bunches for taking the time to help the rest of us less experienced caners.
Awesome !!! When the peppers were gone I used the leftover juice to make hot BBQ sauce.

When you pull the peppers out of the jar, they pick up just a bit of the olive oil. Delish.
