If you've got the cash: Kris Holm (KH) 36er with aero-bars mounted on the T-Bar and 110/125 dual-hole cranks is the best available touring set-up today in my opinion. Make sure you swap out the heavy 36" inner-tube for a much lighter (and easily replaceable!) 29" tube.
Darren Bedford (bedfordunicycles.ca) sells great unicycles with great service, but he's selling off his KH stock, and I don't know if he's doing big wheels at all any more. If not, try unicycle.com for big wheels.
Keep on truckn' Phil! You're doing great! You should catalog your leg muscle mass, they're going to be intense by the end of this! Especially if you're planning on doing over 70km every few days!! But I guess it's just one of those sacrifices for invisible children right?

That unicycle:
Snafu pedals. I liked them more than the Odysseys I now use on my KH.
150mm cranks in this video. Swapped out for 125mm after I completed the mountains. If I were to do it again, I'd go shorter.
Coker wheelset and frame. The old "Big One", with the button-tread tire. Good value, but doesn't have the stiffness I get from my KH now.
T-7 handlebar. It's not adjustable, way too short, but manageable with mountain-bike extension "drops". KH T-Bar is way better.
