I'm a Swede and I avoid Surströmming as it would have been the plague, but I'm pretty convinced that you should RINSE the poor fish before putting in in your mouth... xD But as we say in Sweden, the taste is like the ass, it's split.
=) You usally don't eat it like that. You're violating the poor fish! Next time you buy it, make sure to buy some 'tunnbrödsrulle' (swedish bread roll) and fill it with raw red onion, fresh tomatoes, minced potatoes, cucumber and a touch of "Gräddfil". Then add just a small touch of the fermented herring inside the roll. Thats how to use the fish. Using it like an independent side dish is not really recommended...
Ohhh noooo you should not eat a whole hering!! Just a little tiny bit on a flat bread with onions and potatoes! That way its good.
