Because we want to make sure people aren't being misinformed. It's hard enough to get the notion of "good coffee" out. Facing misinformation during a training is something else.

If your espresso dies in seconds, I'd venture to say that you're either doing something wrong, or there is something wrong with your roaster. Good espresso doesn't die. It changes.
