Well thanks for replying everyone. I found out it was 'Un Sacco Bello' by Ennio Morricone. Also, the music in the first ten seconds is Shostakovich's piano quintet, just in case anyone is curious.

Thanks for this. I always thought it was just their 'theme tune' but in hindsight it does sound very Morricone-like.
