i know it may sound weird but when we make this recipe we put in a couple of chopped tomatoes and two jalapenos chopped and two cloves of garlic through a press yummy
@Delia668 You can't can the dumplings, nothing with starch (flour, pasta, rice) is safe for home canning. BUT you can can the soup part, then just add the dumplings when your heating it up. I do that all the time. :)
thanks for the videos. you're living the life were just embarking. Weve sold our home in a modern trendy city and bought a home in GA on land. It just me and my 11 yr old son and we get to learn together but I believe it will be worth it.
@MischievousKittie good luck! i hope you guys the best of luck! i too am also starting this type of life style the homestead acres has lots of good info and recipes [thats my favorite part].
my mom used to thicken the stock with flour and water ....then make the dumplings like you did ( i think she used Bisquick though ) but not break them up... yum yum..get a big dumpling then pour the thickened soup over them......she put celery in hers too....now i'm hungry and got no chicy n dumps :(
thanks, this looks good..... I know what we are having for dinner tonight.... Turkey and Dumplings..... We cooked one last weekend, made stock and froze the leftovers..... It's cold here today in Virginia and dinner will be good.....
This was so useful! I'm learning to cook and have made chicken stock for the very first time! I'm making chicken & dumplings tonight and this was fantastic because you showed how to do it with leftover chicken. Also, your mentioning that if it didn't gel it was still usable was very reassuring. Thank you so much! I can't wait to see the other videos you've posted.
Wonderful chicken stock ! Gelatinous & yummy ! Talk about comfort food ! I bet your hardworking husband and children gobble it up. Bravo ! My kind of cooking ! Thanks so much for sharing it with us.
Made this last night... except we rolled the dough out and made flat dumplings. I used your "bisquick" mix for the dumplings. YUMMO!!! Also, since we had only bones from 2 leg quarters, we went ahead and threw another leg quarter from the fridge into the crock pot. Just right for 2 people and a work lunch for the hubby next day. Sliced tomatoes from the garden really topped it off too. Thanks for the videos :)
just a quick question, why not just make the dumplings smaller, or would they turn out different, by the way, love the videos, the whole series is great, quite the inspiration
This is quite a good video, but she calls it chicken stock, when what she really has is chicken broth. (stock is from the bones only, aside from vegetables, broth is from bones and meat together). It seems minor, but it can confuse newbies when cooking from a book. An easy way to remember it, is that stock is usually clear, broth is usually opaque.
Very nice demo. The stock is rich and gelatinous. Perfect. Reminds me of my grandma's. She used chicken feet in the stock and lard in the dumplings. Mmmmm.
I made this the other night - we had a leftover chicken and I made the broth in the slow cooker. I think I may have added too much water - it cooked for over 12 hours and the broth still tasted watery - so I had to add quite a bit of chicken boullion. The dumplings came out perfect. Thanks for the recipe - great money saver - we have enough soup to last 3 meals.
i save my chicken bones and boil them in the crock pot on high until they are soft and will break up easy, this makes a good treat for my dogs. i call it dog soup. just be sure the bones are boiled throughly so they don't splinter.
We just had our Thanksgiving dinner last night and I did exactly what your wife did! I took all the meat off the turkey carcass. Then I put the carcass and all the other bones into the crockpot, added water up to the top, put it on low and cooked it all night. We ended up with 1lb, 2 oz meat and over a gallon of the most beautiful stock! We are going to portion this all out and freeze it for future cooking use. THANK YOU SO MUCH!!! Excellent Video. Jill, Oregon
I love your kitchen videos! thank you for sharing with us. :-)
watching your canning videos made the process seem so easy and gave me the confidence to start canning our own food. can't wait to see more, hope you have some more canning videos up your sleeve.
Excellent video Kim! It's fun to see how many meals you can stretch a chicken over, isn't it?!? LOL As soon as I have room in the freezer, I am having our 6 older Barred Rock hens processed. Then, I'll be making lots of chicken stock I think because they'll probably be too tough for much else!
"True homesteading" is a mindset coupled with a lot of "try". It is not, therefore, a cookie cutter, one-size-fits-all living arrangement. Homesteading encompasses many forms, depending on where one is on the journey to self-sufficiency and independence. BYW: The Amish use cell phones and have people drive them around in cars as well as rely heavily on Amtrak. They also use modern medical facilities when necessary.

Believe it or not, at 51 I have only had chicken and dumplings once in my life when I was about 9 and never forgot it.
I'm going to fire up my crock pot tonight. You don't know how long that I've wanted to eat these again.
Thank you.

Question: Why leave the chicken bones and skin in the juices overnight rather than make a stock right away? Will it make a difference? thanks!
NobbyKNobbs 1 year ago
@NobbyKNobbs There is not difference, it was just getting very late and I was tired. So left it for the next morning. :)
HomesteadAcres 1 year ago
@NobbyKNobbs I would probably leave the bones and skin in.

Excellent video. I enjoyed the background music and your child's cooing (that was especially cute!).
I would have added some of that fat that you rendered into the mix when making the dumplings. Overall, your dinner looked very tasty and filling.
