Gordon I am incharge of a team making puddings for our christmas party this year and I have decided to make these. I am going to use your recipe because I wont my team to win and I know we will.   • @RocknBrot93 yes..slammed dunk all the puddings and got orders from it. I made a chocolate croquembouche using Gordon's profiterole, chantilly cream and chocolate sauce recipe (as above) and then stuck to a cone (google chocolate croquembouche, you will know what I mean), it was extremely impressive, people raved about it and it tasted divine. I am so pleased as this is the first time ever I made profiteroles, thanks to Gordon:-)

  • lol wtf this video is dodgy, i followed the method exactly, and the choux pastry turned out really runny and just wasnt going to work, what did gordan do thats not shown in this video?

  • @Gauzl He didn't really mention how many eggs to put in (unless I missed it). A decent amount would be equal parts, by weight, flour to eggs (8oz eggs: 8oz of flour). Have the milk+water equal to almost the weight of the eggs/flour combined (with my example measurements: ~16oz) with about 6 oz butter.

    To help better stabilize the pate a choux, you can use a heavier flour, such as bread flour vs AP. When you integrate the eggs, like he says, do them one at a time and stir until your arm hurts or until you no longer see any loose eggs. Add one, stir, repeat. Add one, stir, repeat, etc. Make sure this is done off the heat otherwise you may end up with scrambled eggs in your choux paste. Bake at a high heat ~400F until golden, the drop the temp down to ~325F so that they'll hollow out.

  • I tried 4 egg yolks, it seemed to work ok.

    I actually just made sum more profitters, and their not turning out quite the way i like, i.e. = Not browning, and a bit small. It's been a while since i've made em, so im thinking i added to much milk and just needed to make them bigger on the tray.

    In saying that, i need around 37 rolls to do a Croquembouche, and this recipe will probly do around 27 - if i make them larger in size, sooo. I might need to make the mix bigger, or do more ??

  • i have a problem with this recipe, the pasterys fine, sauce is fine and so is cream but my problem is one they come out of the oven i let them cool and everything but when i try to get them off the paper the bottom of the roll sticks to the pastry, ive tried taking them off when theve cooled, when there still warm even when they just came out of the oven

    how can i take them off the paper without the bottom sticking

  • I can't make out what kind of paper Ramsay is saying to use in this video, but try parchment paper if you haven't already. A light spritz of non-stick cooking spray on the paper might help as well.

  • @Wibwls try other oven paper first. If that doesn't work, check your dough, if it's too wet when you're making roll sticks (as dough still) add a bit more flower (not too much).

    Also, consider 'glazing' the paper with a fine dust of flower.

  • In the restarurant industry -- like all industries -- you have to work with a lot of different personalities. Some, like Gordon Ramsay are Alfa Male intense, others, like Thomas Keller, are quiet, patient and almost zen-like. The bottom line is -- IT´S ABOUT THE FOOD.

  • People whine and complain about Ramsey being abusive, but he is very much like half of the chefs that I have worked with. I have a lot more contempt for chef wanna be's that he busts his butt to make them change their ways. Real chefs see serving bad food as a crime and a disservice to the industry. If I saw the food he has seen people put out I would have popped a cork too.

There are better ways in real life to teach your kitchen staff into the highest quality possible. If you have to slam a dish into your cooks' chest for not achieving the right quality, that means you didn't have the right leadership, and even so, cooking disasters can happen even to the greatest chefs. Gordon's a gret chef though.

If you want cooking without screaming, then watch the Food Network - which has a tiny fraction of the viewers as the networks that run Ramsay's shows. So don't blame the producers and Ramsay - they're just playing to their audience. If the surveys they constantly run came back saying they wanted him to dress like a clown, he'd be wearing a big red rubber nose and floppy shoes.

His behavior is NORMAL for a chef; in fact, I'd be more concerned if a chef was laid back, because that means he doesn't give a shit. And, you know what? Sometimes Gordon's "back-yard bully" behavior is NECESSARY, because a lot of the people he deals with have their heads so far up their asses they have to visit a proctologist to get their teeth done.
