I love this guy and especially like that he has the recipe available for viewers to see. Gordon I am incharge of a team making puddings for our christmas party this year and I have decided to make these. I am going to use your recipe because I wont my team to win and I know we will. I will let you know how i get on:-)
@RocknBrot93 yes..slammed dunk all the puddings and got orders from it. I made a chocolate croquembouche using Gordon's profiterole, chantilly cream and chocolate sauce recipe (as above) and then stuck to a cone (google chocolate croquembouche, you will know what I mean), it was extremely impressive, people raved about it and it tasted divine. I am so pleased as this is the first time ever I made profiteroles, thanks to Gordon:-)
i love how he sorta shows us how to make these dishes.. but doesnt give us all the information, so we could try to attempt them but ultimately fail.. hes jus fuking with us =//
lol wtf this video is dodgy, i followed the method exactly, and the choux pastry turned out really runny and just wasnt going to work, what did gordan do thats not shown in this video?
@Gauzl He didn't really mention how many eggs to put in (unless I missed it). A decent amount would be equal parts, by weight, flour to eggs (8oz eggs: 8oz of flour). Have the milk+water equal to almost the weight of the eggs/flour combined (with my example measurements: ~16oz) with about 6 oz butter.
To help better stabilize the pate a choux, you can use a heavier flour, such as bread flour vs AP. When you integrate the eggs, like he says, do them one at a time and stir until your arm hurts or until you no longer see any loose eggs. Add one, stir, repeat. Add one, stir, repeat, etc. Make sure this is done off the heat otherwise you may end up with scrambled eggs in your choux paste. Bake at a high heat ~400F until golden, the drop the temp down to ~325F so that they'll hollow out.
@theseventeenteen in this video they just said sugar for the pastry...but when i searched online it stated "golden caster sugar"...what kind did you use? =)
@Rokittyables Good question. He was separating the yolks, but then put it all in there. I'm guessing it's reused footage that they accidentally put in there. That makes me wonder how much of this is reused footage.
Im going to try and make this tomorrow :D I dunno, but a lot of his recipes look so appealing, maybe it's his style and at the en he always says: done :P
Bullying: Treating other people like they are worthless
Example of a bully: Gordon (potty mouth) Ramsay
Bullies are terrorists. Really, they are emotional terrorists. They lack respect for fellow humans. They take out their fucked up mind on other people. No matter how good they are, they are still bullies and Ramsay is the King of TV Reality bullies. Ramsay is the Bin Laden of Kitchens.
@snowblazer12 Ramsay could well publish a book titled, How to Bully People. He could even have a 260 page glossary of all the disgusting, aggressive and intimidating comments and one liners he has handed out to other people. I could see him waking in the middle of the night next to his mistress, Sarah Symonds, to write a few more lines that came to him during his nasty sleep. Ramsay is a very nasty man and has made his life from being a professional bully! And sick minds lap it up like slops.
I actually just made sum more profitters, and their not turning out quite the way i like, i.e. = Not browning, and a bit small. It's been a while since i've made em, so im thinking i added to much milk and just needed to make them bigger on the tray.
In saying that, i need around 37 rolls to do a Croquembouche, and this recipe will probly do around 27 - if i make them larger in size, sooo. I might need to make the mix bigger, or do more ??
i didn't get what he said about the chocolate. Right after "We use between, sort of, 60 to 70% pure.." um.. Perry or Clary or something? Is it a brand of dark chocolate? i'm in India so.. help, please!
I don't see how he's abusive. His style makes me think of another great chef (well...my mom) when she's working in her own restaurant. They have to talk with no bs and makes things done efficiently. No one would complain a chef being abusive, they complain they're slow, inefficient, and waste of others' time.
Everytime I looked at those little cute puff i was wondering how to make it. Gordon Ramsay is great to make sophiscated things "look" very easy. I know I couldn't make it so neatly but I will definitely try. Great video!
@digbycat his asshole cocky attitude it what makes him such a success. The act scares people into listening to him and give them a false sense of him being the dominant person of the group. If you met him in real life you'd think a whole lot differently it's hard to judge just from seeing them when they are at work. I met him at one of his businesses and he was a very kind hearted person and he was jokin around and laughing with the other customers. As I said it's mostly an act
You're right.... I work in a school, sometimes I have to supervise during the exams, and I turn, not into a bitch, but into THE bitch, students hate me (my college self would hate me too), but hey, that's my job and that's what works.
@nicholassan he doesn't it because it adds more of a tart flavor to it and also changes the viscosity of the sauce and keeps it more of a sauce instead of hardening into a shell. I prefer the hardened chocolate around these tho
@sourav777 well it´s the "special" thing in the F word where he shows a recipe... because he doesn´t show the full length they have to spice it up a bit......
i have a problem with this recipe, the pasterys fine, sauce is fine and so is cream but my problem is one they come out of the oven i let them cool and everything but when i try to get them off the paper the bottom of the roll sticks to the pastry, ive tried taking them off when theve cooled, when there still warm even when they just came out of the oven
how can i take them off the paper without the bottom sticking
I can't make out what kind of paper Ramsay is saying to use in this video, but try parchment paper if you haven't already. A light spritz of non-stick cooking spray on the paper might help as well.
@Wibwls try other oven paper first. If that doesn't work, check your dough, if it's too wet when you're making roll sticks (as dough still) add a bit more flower (not too much).
Also, consider 'glazing' the paper with a fine dust of flower.
You dumb pricks are the ones actually watching this vid, don't like it, turn it off and watch something that a pussy like you can watch like the tely tubbies! Ramsay is an awsome chef and passionate about his food, passion brings out the emotion that he portrays. I just hope one day, i can be just half the chef this man is! Digby cat, ur a wanker!
@Inspiration2Insanity totally agree. so many haters on youtube decide to watch something and then talk shit abt it ... why the F**k were they here in the first place? .. something must've tickled their senses. :)
this is from the F Word you can see it on BBC America it's a great show he takes normal people into the kitchen to cook for 50 guests. The "hook" is they only pay if they like it!
In the restarurant industry -- like all industries -- you have to work with a lot of different personalities. Some, like Gordon Ramsay are Alfa Male intense, others, like Thomas Keller, are quiet, patient and almost zen-like. The bottom line is -- IT´S ABOUT THE FOOD.
People whine and complain about Ramsey being abusive, but he is very much like half of the chefs that I have worked with. I have a lot more contempt for chef wanna be's that he busts his butt to make them change their ways. Real chefs see serving bad food as a crime and a disservice to the industry. If I saw the food he has seen people put out I would have popped a cork too.
@peterinbrat As a chef it is a crime to put out crappy food just because. But as a Business administrator it is a crime to treat your people like he does sometimes . There are better ways in real life to teach your kitchen staff into the highest quality possible. If you have to slam a dish into your cooks' chest for not achieving the right quality, that means you didn't have the right leadership, and even so, cooking disasters can happen even to the greatest chefs. Gordon's a gret chef though.
@eldruidacosmico i agree with you, i think he treats people so bad for the show and for his reputation, to become like a Simon Cowell of cooking but i think its ridiculous that you would abuse people so bad just because of a bad omelette, i mean come on, there's worse things in life that happens and nobody gets yelled at like that, its absurd, i dont see the police screaming like that to killers and rapists and maybe they should, but for an omelette or profiteroles?....

You are a dumb sheep like the other flock of blind followers of Ramsay who get off on his disgusting language and the shocking way he treats people. He is a BULLY! He is arrogant, dismissive, impatient, narcissistic. He treats people like they are trash. I believe he has underlying mental issues. He is soaking in his own deluded self love. He is a disgraceful example of unprofessional management and leadership behavior. Those that condone his behavior are sick and troubled.
This comment has received too many negative votesshow
So you must be a deluded Ramsay fan, eh? And why? Because you get off on his bully-boy belligerent behavior, you poor dear troubled wretch. Ramsay is a gross example of how NOT to treat people in the work place. He is nasty and sets a shocking example of business behavior. He is in fact a workplace psychopath. Those that giggle and get-off at his disgusting behavior and language need as much counseling as the deluded Ramsay himself. He is rich because of you and your sick mind.
This comment has received too many negative votesshow
You cant tell the difference between right and wrong, you sick puppy. You are the type of person who has missed out on a healthy upbringing. Ramsay is a nasty. He thinks that not only the sun shines out of his arse, but truffles and foie gras comes out also. He is so blinded by self-love that he has become deluded. He is a potty mouthed cook who entertains similar minded bully boys. Someone will one day beat the snot out of the wanker, but it wont be on one of his sick TV reality shows.
my god you've been posting basically the same comment on so many of his videos, if you hate him so much then stop wasting your time here, you're only going to get insulted
@ Digby You confuse television entertainment with reality. Television producers give the audience what they want. If you want cooking without screaming, then watch the Food Network - which has a tiny fraction of the viewers as the networks that run Ramsay's shows. So don't blame the producers and Ramsay - they're just playing to their audience. If the surveys they constantly run came back saying they wanted him to dress like a clown, he'd be wearing a big red rubber nose and floppy shoes.

@ Digby You think that I don't know right from wrong, yet you call me names without even knowing me. If you want to see the type of asshole you are complaining about seeing in Gordon Ramsay, just take a look in the mirror.
This comment has received too many negative votesshow
@lesbian669 Ramsay exhibits a disgusting example of professional workplace behaviour what a back-yard bully he really is and the mouth on the wanker! the abuse and disgusting language that comes from his ugly mouth like verbal bile slopping into the woks and pots and pans who really, would want to eat anything this arsehole dished-up? Only the deluded that are, for some reason, intoxicated with his arrogance and bad temper and bully behaviour
@DigbyCat Have you ever worked in a kitchen before? I have. Every kitchen I worked in had a chef just like Gordon. His behavior is NORMAL for a chef; in fact, I'd be more concerned if a chef was laid back, because that means he doesn't give a shit. And, you know what? Sometimes Gordon's "back-yard bully" behavior is NECESSARY, because a lot of the people he deals with have their heads so far up their asses they have to visit a proctologist to get their teeth done.
Bet he don't have to wash up.

@Wibwls try other oven paper first. If that doesn't work, check your dough, if it's too wet when you're making roll sticks (as dough still) add a bit more flower (not too much).
Also, consider 'glazing' the paper with a fine dust of flower.

In the restarurant industry -- like all industries -- you have to work with a lot of different personalities. Some, like Gordon Ramsay are Alfa Male intense, others, like Thomas Keller, are quiet, patient and almost zen-like. The bottom line is -- IT´S ABOUT THE FOOD.
elcapote1477 2 years ago 3
People whine and complain about Ramsey being abusive, but he is very much like half of the chefs that I have worked with. I have a lot more contempt for chef wanna be's that he busts his butt to make them change their ways. Real chefs see serving bad food as a crime and a disservice to the industry. If I saw the food he has seen people put out I would have popped a cork too.

@peterinbrat its really just the nature of this business...

@peterinbrat
He actually makes you appreciate even more a delicious dish served on time in a restaurant.
usagi18 1 year ago
@peterinbrat As a chef it is a crime to put out crappy food just because. But as a Business administrator it is a crime to treat your people like he does sometimes . There are better ways in real life to teach your kitchen staff into the highest quality possible. If you have to slam a dish into your cooks' chest for not achieving the right quality, that means you didn't have the right leadership, and even so, cooking disasters can happen even to the greatest chefs. Gordon's a gret chef though.
eldruidacosmico 1 year ago
@eldruidacosmico i agree with you, i think he treats people so bad for the show and for his reputation, to become like a Simon Cowell of cooking but i think its ridiculous that you would abuse people so bad just because of a bad omelette, i mean come on, there's worse things in life that happens and nobody gets yelled at like that, its absurd, i dont see the police screaming like that to killers and rapists and maybe they should, but for an omelette or profiteroles?....

@frenchkitty You've obviously never worked in the kitchen of a high-end restaurant. Ramsay is hardly unique in being harsh with his staff.

U dumb whining prick! He's only using that kind of language when wanting he's workers to not fail, his actually a very kind in general.

oomg, just get a fucking life, will you?!
11moii 2 years ago
@ Digby You confuse television entertainment with reality. Television producers give the audience what they want. If you want cooking without screaming, then watch the Food Network - which has a tiny fraction of the viewers as the networks that run Ramsay's shows. So don't blame the producers and Ramsay - they're just playing to their audience. If the surveys they constantly run came back saying they wanted him to dress like a clown, he'd be wearing a big red rubber nose and floppy shoes.

DigbyCat 1 year ago
Did Ramsay beat your family to death with an overcooked steak or something ?
You mad.
leesin666 1 year ago
@DigbyCat Have you ever worked in a kitchen before? I have. Every kitchen I worked in had a chef just like Gordon. His behavior is NORMAL for a chef; in fact, I'd be more concerned if a chef was laid back, because that means he doesn't give a shit. And, you know what? Sometimes Gordon's "back-yard bully" behavior is NECESSARY, because a lot of the people he deals with have their heads so far up their asses they have to visit a proctologist to get their teeth done.
