  • @ib422000 You're most welcome! It is a very easy and excellent salad or side dish to accompany fish, chicken or beef. Sometimes we just make the baba ganoush and enjoy it with pita chips.

  • Thanks for the video. Good idea to blend the garlic with leamon juice first. I don't take the seeds out and I scrape the eggplant skin for more of that stuff. The result is a little darker babaganouj, but I don't waste anything and probably healther that way :)

  • @shanereel It is very okay to add or omit a seasoning from a recipe to your liking. My son likes baba ghanoush with cumin and a lot of lemon. Enjoy!

  • @wynne14me Traditionally Pita bread or Pita bread chips are used to dip in to the baba ganouch. But you can also use vegetables like carrot and celery sticks instead of bread, if you desire.

  • Hi Mariette, would it be possible to make this with an eggplant you had baked the day before and kept in the refrigerator overnight?

  • @YukiNekoPrincess Yes you can. You can also bake and freeze the eggplants when they are very cheap on the market. Then whenever you need to prepare baba ganoush, just taw the frozen eggplants at room temperature and then proceed as instructed in my video.

  • @Snowbeavers77 Lemon juice is an important ingredient in baba ghanoush, but the quantity depends on personal taste. Reduce the lemon juice in half then taste if you feel like you need more lemon, you can always add.

  • @anrocczy1 i have not frozen the prepared baba ganoush before( we never have left overs lol ) but you can definitively freeze the baked eggplants in its skin or without. I do it all the time. When the eggplants are in season they are good buy. I bake and freeze them wrapped in plastic wrap or foil, ready to be used as needed. It is really very handy when you have unexpected guests.

  • For a decorative touch I usually use some pomegranate seeds, the contrasting purple colour with a small bite of the seed really brings out the dichotomy between the textures!

  • Hello. Thanks for the recipe. I did exactly as you have done, but I did mine in my Vitamix 5200, and I left the skins on and the seeds in it when I processed it. Try it like that sometime. It is very good that way - and you get all the original roughage and nutrients that are otherwise discarded.

    It also worked well using finely ground dry roasted cashews & almonds rather than peanut butter/Tahini. A touch of honey is also a good addition.

  • @esxtreme Tahini is important in this dish but if you don't have it try to put plain yogurt instead. It will not be the same taste but I am sure it will still be tasty.

  • Another great flavor and garnish for the dish is culinary sumac. It looks a lot like paprika, but has a lemony flavor. I like to cut back on the lemon juice so the recipe is more creamy and smokey than sour... and then sprinkle a little sumac and drizzle olive oil on top. Great dish to serve with a simple roast chicken. Makes for a nice picnic. A little salad, some fresh fruit. Bon appetit.

  • This is a really nice recipe for those who do not have an outside grill (smoke from a grill really adds lots of flavor) The simple garnish is really nice, however I prefer to use colorful chopped vegetables to give it added color, flavor and crunch. My favorites are sliced black olives, green olives, purple onion, red and green bell peppers, and green onion. The crunchy vegetables are a nice contrast to the creamy dip and perfect for dipping with pita bread.

  • Can i use anything to replace tahini?

  • If you do not have any home oven , simple place the aubergine or plant into a toaster oven and toast ( bake ) till it is soft to the fork or knife.

    Then take then out . cool them for 3 minutes and scoop the soft toasted flesh out with a large spoon into a bowl dish.

    Mash it up with a fork , add in extra virgin olive oil , salt , lemon juice and a little mayo - for some creaminess and sweetness.

    You do not need tahini all the time - expensive stuff.

  • @babygyalk There's a greek restaurant in my area that serves it in a big pita with cucumbers, tomatoes, sprouts and lettuce. It works very well like that.
