Another point is why would you cut slots into the lemon wheels after slicing the whole fruit. do it all at once and save more money and time then you ever will cutting limes into quarters.
bartending shouldn't be about how to work economically, it should be about beauty and taste, about aesthetics ;) mix your drinks perfectly and your customers will pay the 2 cents for the full orange slice for sure! ;)

wtf? those lime garnishes are no good. better to use a lime wheel. Also why cut bits off both ends before you cut the good bits, leave one end on so you have more to hold on to when cutting.

You need to sharp your knirfe avoiding many strokes. The strokes more likley to cut your finger.
