Its not the water. Taste is almost all about diet. Compare Saup and Canvasbacks. Animal matter in the diet usually gives duck meat a much stronger taste that some people dislike. I myself don't discriminate against any ducks.

here in california shovlers are a very good eating duck they taste good because of the clean water we have and if youve ever shot a male they are gorgoues
