Could you do an autonomous car, sort of a mini-DARPA? Then put a Nerf cannon with auto tracking. Hmm, how to designate a target. Perhaps with a bullseye on them?

Could you make the car be autonomous and stay between the lines?

umm... This may seem a bit dangerous and fun. How about you put your test firework area to use again with this idea. Borrow my truck (I have insurance) and show my how to control the steering wheel and gas pedal with my usb joystick. Now, that would be cool. You could even throw in some digital I/O controlled exhaust flames for effect.
