And it's so easy to add your own twist or leave things out, I've used dried cranberries instead of raisins and left the fennel out, or salmon or crabmeat instead of tuna. His combinations seem strange but it's delicious and so easy!
I love how down-to-earth he is. You'd think a French chef would be uppity, but he's not afraid to admit that salad and pizza is one of his favorite meals. Jacques is awesome!

@SilverSkyline92 That's a lineup of great chefs and cooking shows. Throw in Rick Bayless and Ming Tsai too. Hate to say it but PBS has far better cooking shows than the Food Network.

Yes. It should be refrigerated and used within a week to be safe. He's also got plenty of vinegar in there which also helps. I'm sure he knows what he's doing.

Use common sense. Does it smell ok? If it does then taste it. Does it taste ok? Then it is ok.
It is a rare occurrence that harmful food based bacteria doesn't smell/taste like crap.
That shit is simply hyperbole by network news.
