You don't have to use any mods or change anything from the original game to do this on the pc, so i guess it works fine on the 360 as well.

I see that many people are askimg the same question, so i added a note in the end of the video explaining how to do it:

You must be a Journeyman in the Acrobatics skill. Press the Block key and then the Jump key while walking or running towards a direction (front, back, left or right).

@unicornwinx XD my three year old comment. I know a lot more now >.>. You need to advance your acrobatics and you should be able to get the ability to roll eventually. (it is also said in the video near the end)

I didn't have to use any mods for this trick, so i would assume it works fine on PS3.

You have to try many times, until you get used to it... As you can see and on this video it didn't work in the first time, and not even the second, but only the third. Try to measure the distance you have from the stairs the moment just before you do it and if it doesn't work try a shorter or a longer one. The third person camera will help you a lot for this. Also don't forget to have a bow equipped but not armed.

All you have to do is to make a roll towards the stairs.

Your skill in acrobatics must be at least 50. While pressing the "block" key, quickly press one of the four direction "movement" keys and then quickly the "jump" key.

I already knew about this, but I can't record a video. I also do it a slightly different way. If you roll back and forth from the two walls at the top of stairs, it'll work too.
