No problem. Actually, I used my soldering iron to heat up the solder on the bottom and simultaneously ripped out the wires one by one after removing the plastic plug from the stick's PCB. A little rough, but it worked out.
Those are pretty much standard wires you can get anywhere (Radioshack, etc.). You might not be able to get them in the same color, but that's not a big deal.

Well, you need a rotary tool, e.g. a Dremel. Those tools can be use for drilling, filing and cutting, so it's a must-have for hardware mods. But make sure to get some sanding paper as well to finish it up.^^

The restrictors you're comparing are all 8-way restrictors, one is just a square gate and the other an octagonal. There are also 4-way and 2-way restrictors in both octagonal and square shape.
I think it also depends on the genre you're playing. For shooting games like Ikaruga, I'd say that a square shaped restrictor is a better choice.
Yes, there's a lot to do, but it's not that hard. You could also choose a Seimitsu LS-32 stick instead of the Sanwa one, though that means a lot more work as the base of the stick is bigger. Given the fact that the LS-32 is shorter and thicker than the stick I used, I thinkt it's not worth it - although again, it's a matter of personal preference.

...You'll get a diagram/template for making perfect cuts into the casing for the buttons.

@TheronInc I just used the standard white sanwa buttons. Others might think that it is boring, but I find it very... elegant on the agetec.

You should pull out the wires from the stick, as it will be easier to work with. You'll need some force, yes - but don't break the PCB.^^

It works great, feels way smoother than before. Well, I used my cheap rotary tool, you'll need something similar, e.g. a Dremel.

Just a little pointer
4-way restrictor = up+down+left+right
8-way restrictor = up+down+left+right+all diagonals
