Why would you freeze fresh fish? You want fresh, not frozen fish. It's an extra step, in the wrong direction.

1) PixieVixxen, you shouldn't cook your rice in a microwave. You should invest in a rice cooker, it rice comes out better than on a microwave and stove.

2) PixieVixxen, if you like sushi; you should come on down to my channel for something called "the Sushi Library"; it comes in volumes. You will be like a little kid in Toy's R Us. :-)

Isn't it funny that many asians wouldn't know how to make rice if they were in the US? :P

It's better to do the "kawaii" style rolls (nigiri sushi) with two hands. Use 2 fingers (pointer&middle) from your right hand to compress the rice in your left hand. That act is actually called "nigiru", so that kind of sushi is called nigiri sushi.
