Could you add some technical information? My video camera has a time-lapse mode which I have played wi... er... explored with pleasing results but to move it smoothly would require some sort of motion-control. I certainly couldn't capture those night scenes. I'd bet that, for at least some of this, you took sequences of stills with a DSLR which would work much better in low light and you could crop them for panning.
