Dont use oil, use butter instead. It makes the 'French toast', a nice golden brown.

Cover the pan with a lid, to stop the oil splashing. Simples!

NEVER! NEVER! NEVER! Put water onto a pan with hot oil in it! It's dangerous, as you discovered & can burn your self!Just cover it with a lid, or damp cloth (tea towel). Or let it cool, whilst you enjoy the toast :D
