I don't want to ruin the party here but just to know if we're all in the same page, Einstein didn't refer to "God" as the christian version of god, if you do some research you will find out how far is his idea of God from what the Christians believe and what the Bible tells us it is.
So Evil does not exist because it is the absence of goodness, right? Then, even if I agreed with that conclusion, what is the evidence that a God does exist? Not Faith, not a special feeling in your heart, what supports the "fact" that it is God who provides the goodness? If God is something we do not understand because he is so far above our own thought processes, then why could it not be true that there is another power, force, or natural occurance which provides this "goodness"?

If you did even the minimal amount of research, you'd find that this incident NEVER happened.
It is an Urban Legend that appeared in the early 2000's.
Not only did this incident never happen with Einstein, there's no evidence that it happened with any scientist.
