Made this today and changed just a couple things.One its better to add the marsala during the caramelization, and add a little extra. This sweetens without the agave.Also butter is way better for caramelizing than olive oil.
OMG I just made your mock liver pate - I thought I'd died and gone to heaven. No kidding!! It was sooo friggin' good. I omitted the agave and the marsala. The recipe I used has green beans instead of mushrooms. It might be interesting to try this version and then one with half mushrooms half green beans.

From a health standpoint here, this spread has no cholesterol, is high in omega 3 fatty acids and won't clog your arteries like traditional pate will. Plus, it tastes great!

theres this book called "how it all vegan" that was amazingly easy and simple and delicious! they had a recipe like this but it went further.... adding mashed potatoes, and some others like one spicy pepper, blending it, then baking it, creating a crispy top, it was excellent!

Funny you should mention this. A friend took me to a vegan Chinese restaurant. The dishes were like Kung Po "chicken," "beef" and broccoli, etc. A huge menue with all "meat" and "chicken" dishes. The very thought of all that made me queasy. Believe me, I don't want to eat meat, and since I don't, I certainly don't want to eat anything disguised as meat.
Well a lot of vegans miss the taste, or really more often the texture of meat but simply have ethical objections to eating actual meat. However many vegans don't even like eating things that look or taste like meat. Not eating whey powder is easy since many vegans just simply don't like eating many of the pre packaged products that tend to contain it. As for your last question, you may find some vegans that would be okay with this, but the overwhelming majority would absolutely not be.
People tend to be vegan for different reasons. Some simply don't like factory farming, others would never eat meat or dairy for any reason ever no matter what. I don't eat many meat substitutes because frankly I don't think they're that good when compared to more natural products such as tofu or tempeh. I do eat them sometimes because, let's face it, they're hilarious.
All that being said, vegetarian chopped liver is a fairly traditional Jewish dish. Because of the Kosher prohibition on mixing dairy and meat in one meal, there are many meat and dairy substitutes in Kosher cuisine. In fact many meat or dairy substitutes really exist for this reason, and the fact that they're vegan is just a lucky coincidence. The Tofutti brand of soy based "dairy" products is a good example of this.

I just made, and ate your recipe! It was so good, but I made a few slight variations: I used some molasses instead of agave. I used to love my mom's chopped liver, but I haven't been able to eat it since going off the meat. I've you can come up with a vegan alternate for white fish salad then my second childhood will be complete!

They are fresh mushrooms, and you could try whizzing it in a blender. If may bog down the blender a bit though without extra liquid.

It's a natural sweetener made from cactus. You could sub another sweetener if you wanted to.
Look for agave nectar in grocery or healthfood stores (or online). It's great stuff!

This is a good point: I am a big burly guy and part time vegetarian for several reasons:
1) Health benefits of decreasing animal fat and eating more vegetables. Vegetables with every meal.
2) Industrialization of meat (esp beef) IMO is bad on a lot of levels- Deforestation, animal cruelty, contributing to poverty, energy consumption.
3) I can eat more volume of vegetarian food for fewer calories (usually) than I can with animal or highly processed foodstuffs.
