Ok i agree but that comment you can not sharpen stainless steel is not good at all. all my chef knifes ARE S/S and i can sharpen them to shave with :)
Dude you never ever have to cut into the gut cavity ever, cut behind the head 1st then down the body, and then slice over the rib cage and that wont let you cut into the gut cavity ok :)
Nice filleting, one thing I do which makes filleting the other side a bit easier is don't quite take the first fillet off the fish, then flip it over and do the other side, this keeps the second side raised while filleting.
