Actually he does die. Guo Jia kills Zhou Yu at Chi Bi. Before Guo Jia died he brought one of the burning ships to the Wu fleet and he killed himself and Zhou Yu at Chi Bi and that's when Sima Yi and Lu Meng became Wei and Wu's stradegists.

Dudes, he died in 210. Chi Bi took place in 208/209 in history. He died of illness, if I'm not mistaken. The novel portrays him as more of a cynic, and his dismay over not being considered the best over Zhuge Kongming is why he died in the novel.
