I've had vegetarian lasagna before. And for a non-vegan is was really good! It had spinach, squash, broccoli and cheese. Delicious! Not something I would have often but definitely something I'll eat again. Thanks to my gf for introducing me to it. I'm not so sure about vegetarian meatloaf though. I'm not really a fan of meatloaf to begin with.
