The rarest gun is one with it's name colored orange, while the least rare is in white. There are also purple names, green names, and about 2 other colors that are different rarities. Also, to not auto switch, STOP HOLDING THE BLASTED PICKUP BUTTON! (I know this is an old video, but the advice is good for novice player who does the same thing...)

The auto switching isn't an option. When you target a weapon on the ground and tap X, you won't equip it.
