  • Ok Ok. I've been misguided by the definition of "clean". I though it included not only microorganisms but also dust, foreign material, garbage, rubbish, etc. I accept that the statement " a Dogs mouth contains less bacteria than humans" but no so much for " a Dogs mouth is cleaner than humans"

  • A dogs mouth is cleaner then a humans only because the make up of their saliva kills more germs than our mouths. So if you swab a dogs mouth and a humans mouth and look at the germs (assuming they just ate the same thing) the dogs chemistry will have killed many more germs. Now does this mean that after you dog eats poop you want to let them kiss you? Feel free... But i say no.

  • @dolphindream. The roasted chicken is put on a skewer which keeps rotating all the time in the oven so all sides get roasted at the same time, where baked chicken just sits inside the oven on a tray to bake.

    Now the broasted chicken is the exact same thing as fried chicken except with fried chicken, the fryer has an open face where as the broasting fryer is a high pressure fryer just as if u r frying in a high pressure cooker which makes the chicken much more moist and cooks much quicker.

  • As mentioned earlier, touching raw chicken and then placing your hand in the salt bowl is perfectly fine. bacteria cannot survive in salt. Bacteria lives in moist (usually organic) matter. Salt kills it instantly.

  • His method might work, but there's plenty I'd do differently. Keeping the oven at such a high temp will only work with small birds - otherwise they're going to burn outside and will be raw inside. Main thing is checking the dark meat with a meat thermometer - there was no mention of that here.

  • it simply because it wouldn't be considerd "roasting" because the lack of the hot air, once liquid is intreduced then it's considered stewing or braising... "doesn't matter that much for home cooking"

  • Letting it rest in the juice boils it, instead of roasting it, and it never lets the skin on the bottom of the chicken get crispy. I actually remove the backbone of the chicken and flay it out, so that the whole thing cooks much faster and all the skin gets crispy. That way you don't need to put it on a rack.

  • I liked it. Short and savory. I notice he clips the wing ends and some tuck them. I guess that's the difference between a chef and a cook. He didn't add oil or much seasoning. Pretty basic but it looks like it will get the job done.

  • Cornelius makes a valid point. Cooking any bird by time is sheer madness. You might as well leave the thing in your grandmother's airing cupboard for a fortnight. The key is, as he says, to cook by temperature. This way you can get the whole bird done in under five minutes.

  • For the less superstitious, it is easier to carve the breast meat after cooking without the wishbone in the way..

    I think the bad luck comes in when you cook the chicken by time, rather than to temperature, and so end up with a dry, overcooked bird. :)

    That is a nicely sized bird as well. The maximum bird I like is 3.75 lbs./1.70 kg.

    Too many US stores sell monster birds to over 5 lbs./2.27kg, and preparation/cooking plan becomes a chore with oversized breasts. I am a thigh man, myself. :)

  • I do all of this, but I do it in a dutch oven. Throw in new potatos, baby onions, chunks of carrot, a bit of minced garlic, chopped celery, and I have even thrown in a couple of slices of bacon. Once the chicken is done, and the vegetables are tender, discard the bacon, remove the chicken and the vegetables and then make gravy with the drippings. OHHHHH...yeah. Not exactly "heart healthy", but no one lives forever.
