It is true and there is no magic. The amount of ascorbic acid (vitamin C) change when a fruit gets older, i.e. vitamin C degrades very quickly over time in fresh juice (citrus juices). Besides vitamin C is sensitive to temperature. The fruit actually loses its vitamin C while it ripens.
