They do it because the game allows them to, and that's pretty much it. Some players add an extra hit, others dash or superjump...sometimes it even becomes a recognizable trait (Nitto's backdash and Rikimaru's taunt for example).

Is there a particular reason why players always quickly dash up to their opponents corpse at the end of every round?

the reason it does that is because the framerate is lower when its moved to youtube.

You can really tell that this game is something special when it looks really off on youtube. The background doesnt shake when Q Taunts or Throws his foe, Oro's homing boogers can be seen in double (in game it's just one) and when there's a parry, the character doesnt turn blue.
