A suggestion to Kerala Tourism folks - can you mention measurements????

Instead of "some" water. "1 cup water or 2cup water" ?

Instead of "steam for a while", "Steam on medium heat for 15min for x quantity of rice".

And showing ingredient list would be nice. Instead of "add a little garam masala".

supersophie777: What he said as duff is correct. Actually duff means "A stiff flour pudding boiled in a cloth bag or steam " . I think u confused with 'dough' .

That smooth idiyappam string coming easily is the tecnic, is the nice thing. Otherwise people used to fight with the dispenser to bring in string and string out of it...
