NOTE!!! After working with the dehydrated wheat I have discovered that it is far better to store the wheat in a ventilated container. I just don't put the lid on all the way. Now that the wheat is "alive" it needs to breath some. I always use mine within 2-3 weeks. I did keep some sprouted soft white wheat for too long which I had kept in an airtight container and it did go bad. You can tell just by smelling. I may not have dried the grain fully adding to its spoiling.
