Why are the underhooks so high? I do BJJ and we were always taught to have the grip down in the small of the back to break the posture. I know that Greco wrestlers are better than Bjjers in the clinch, so I'm assuming that this is a better way of doing it but I don't understand why. Can you explain?
either take your clinch high on his back to control his upper body and prevent him taking away some of your dominance with overhooks, or grasp your underhooks low on his body to take his hips. Either are good, but middle back is less dominant.
im no wrestler but i read that they put their hands high behind the other guy's neck so he cant bring his arms down and grab his own wrist under the guy that is doing the double underhook's arms and take away some control
I also do BJJ and I know what you're talking about, I prefer to go low and break the center of gravity and do a reap on the leg is needed (probably not though). The throw is a lot of flash and there is a lot more that can go wrong. It's all about preference. Also the BJJ style takedown from this can be done a a bigger guy where as double underhook throw can't. Look at randy couture, he is an amazing wrestler and has some of the best takedowns in ufc yet he botched the double underhooks on bill.
If your underhooks are low, that means your opponent can set up a high overhook. Greco wrestlers can do some serious damage throwing you with high overhooks. Refer to a salto/body sag/inside leg trip (freestyle move adopted from Greco)

The double under hooks is a domination position from the feet. Think of it as the mount while standing. It is the best control you can have over a person while they stand. I can say from personal experience that i get the same sinking feeling when someone gets double under hooks as when someone gets the mount on me. It is not the end of the line but you know its heading that direction.
so why are underhooks more advantageous compared to overhook?

in jiu jitsu (dont mean bjj) there's a technique that you could describe as a single underhook.
it's a takedown, controll, and then submission all at once. hurting the shoulder.
you basicly have 1 underhook, step out to that side, and raise their arm up over their back, and circle down from there.
i see openings for it all the time, but I'm not sure how it'd work in mma.
anyone got experience with it in mma?

Actually I tend to like over under better but it's great for when you have double undies and an arm gets pushed out.
