We grow giant kohlrabi types with 8 to 10 inch bulb heads. Makes great soup by cubing up and boiling until soft, drain and add to caramelized onions and butter. Add cream, salt and pepper and blend/emulsify until creamy. Top with Crispy bacon bits, chives and or cheddar cheese it's the best!
I'd strongly recommend the next time you make a broth-based soup with Kohlrabi that you try adding the leaves to it. This is what my mother does and it turns out great. Of course, post-war Europe were lean times - especially since she was from the region of Germany given to Poland and thus neither nation acknowledged her citizenship. Thus, she learned to use everything of what she could get when growing up. Oh yeah, and it is delicious in her chicken soup - some of the best I've ever tasted.
