Interesting I never seen a 911 head until now , shure reminds me of the heads on the newer Kohler,Briggs & Stratton OHV lawn mower engines that I service every day.
I never seen that trouble since the gasket area is larger. I know on the VW air cooled engines that very small gasket surface causes problems on those engines.
Only engine like that I`v seen sucessful in long service is the type with BMEP less than 100 psi
Good gig for a CNC lathe; you could write a program to cut both faces the same amount on each pass so it would only be a matter of feeding it another few thousandths until it looks right.
I think that this head came from an old 911 flat six engine aircooled; the heads came off individually to allow the air to cool between these one. Sorry for my bad english, but i'm italian...
He shaved the first part where the circular gasket goes, then he shave the surface around the circular groove. Which then brings it back to its original dimensions.
This brings the valves closer to clashing with the piston. Is that an issue or are you miles away?

Does the cam chains take up the slack caused by the machine work to the heads ?

Yes, we only take about .004" to .010" off the heads.

Does this cause the Compression ratio to go up since the piston will now be farther up in the head at TDC?

Just slightly. As a rule of thumb, for every .010: you remove from the head, the compression ratio goes up by .1 point.

Probably not enough to make a difference, but maybe. I assume he's doing that for all of them, but maybe not.

Yes it would but very slightly but he will more than likely machine all of them as a rule of thumb
