This is amazingly interesting Many of Europe's finest swords we have samples of today used welding of high carbon steel with a flexible central "bar" or shaft, sometimes of welded wires. The Japanese folded blade actually puts metal inside metal like a sandwich.
Ive seen the katana crafted on a different documentary but now that ive gotten much more into history i do have to say i am a fan much more of the beauty and time that goes into the katana as opposed to the brutish european style swords. Like for instance im not even sure the european style sword has a carbon center.. and if i had to bet on which is lighter and easier to handle id say the katana any day. But as far as killing goes, from one documentary i saw, they both were about even.
@Zachbro39 Not really the Katana is very light weapon that is completely useless weapon against armor. Katana is more of a show than actually than fighting goes. European swords in combat goes it way better. Katana fail against chainmail what does that tell you.
@LoneMyth True i wouldnt place my money on the katana if it came down to a medieval knight vs a samurai mainly because i dont think they would be able to block or even parry an eruopean style sword very well due to the weight and force coming down. And yea the katana would deffinetly fail against chainmail because chainmail is designed to deflect aginst glancing or slashing bows such as a katana. But the samurai had very light armor as opposed to a knight, so i wouldnt doubt the katana entirely.
@LoneMyth That's completely wrong and callow. Katana, AND broadsword fail against chainmail when using a slashing or draw cut. Chainmail always fails however, when a Katana, Broadsword, spear, etc. use a thrusting technique, particularly halfswording. BOTH the Katana and the Broadsword are effectively capable of thrusting a few inches into plate, but it's always best to seek gaps in armor. Steel plate isn't as good as people are made to think. Just visit ARMA

A true katana is made out of 2 layers of at least 1060 carbon steel. thats the same type of steel used in machetes. the difference, machetes are usualy 1045, alot lower quality. the katanas you speak of are those cheap reinactment katanas. And if you stab a plate steel armor set, the katana will go through enuogh to make a wound!
@AmericanSamurai100 No, they do not. A medieval breastplate can resist a shot from a 120 lb English longbow and can survive a couched lance strike from a mounted knight at full gallop. A katana cannot match that. The longbow arrow would often pierce the plate, but the padding worn underneath would catch the arrow (which is slowed significantly, and often blunted).
Look up Longbow vs Plate, it's from "Weapons that Made Britain" and I highly recommend you watch the series too.

As for the the steel, western steel is carbon steel. Japan is a resource poor island while Europe is resource rich. Their poor quality minerals forced them to go to extreme measures that the Europeans didn't have to. Only one was covered head to toe in tempered steel.

@Zachbro39 the majority of katans produced were inferior due to the fact that most soldier wer ashigaru (or what ever the fuk they're called ) also the the european array of weapons are in no way brutish nor was the application brutish. they have martial art combat manuals aka Fechtbuch(fencing books) from the high middle ages in german monetaries that are very technical and advanced if not more so that their japanese counter parts
I love this host because he doesn't just talk about the history and practices of the warriors, but becomes fully immersed in it. Wearing the armor, going through the training exercises, and looking at all aspects of their lives.

But cutting straws is not.
They should've at least demonstrated the strength of the soaked straw, because otherwise now it just looks like cutting straws.
